
Since August has slipped away into a moment in time and the autumn leaves are falling down like pieces into place, it’s the perfect time to bring out these amazing chai cookies! Perfect for those windy and cozy fall nights.
This recipe was posted by Taylor Swift in September of 2014 and became an instant hit amongst fans. Whether you’re making them for yourself to enjoy or taking them to a Halloween party or a Friendsgiving, they’re the perfect fall treat and will make the whole place shimmer!
Ingredients:
Cookies
- ½ cup unsalted butter, room temperature
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup powdered sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 chai tea bag (2 if you want a more intense chai flavor)
- ¼ cup cinnamon sugar (make your own with 3 tbsp sugar and 1 tbsp cinnamon or pumpkin pie spice)
Icing
- 1 cup powdered sugar
- 2–3 tbsp milk (2 for thicker consistency, 3 for runnier)
- ½ tsp pumpkin pie spice

- 1 large bowl
- Electric mixer
- Rubber baking spatula
- 1 large baking sheet
- Parchment paper
- Small bowl
Instructions:
In a large bowl, beat the room-temperature butter with an electric mixer until it reaches a light, whipped consistency. Add the oil and mix until combined. Once the oil and butter are combined, add both the granulated and powdered sugar and mix again. Add the egg and vanilla extract, mixing until fully incorporated.
Slowly add the flour, salt, baking soda, and chai tea into the bowl. Using a rubber spatula, gently fold the ingredients together until a dough forms and everything is well incorporated. Let the dough chill in the freezer for 1 hour.
About 15 minutes before the dough is done chilling, preheat your oven to 350°F and line your baking sheet with parchment paper. Place the cinnamon sugar in a small bowl. Roll the dough into 12–14 evenly sized balls, then roll each one in the cinnamon sugar. Arrange them on the baking sheet, leaving room for them to spread.
Bake for 10–11 minutes, or until the edges are set. Let the cookies cool completely on the counter. While they cool, whisk together the powdered sugar and milk to make your icing. Once the cookies are fully cooled, frost them and sprinkle with pumpkin pie spice. Enjoy!
