Back to school season is back and it’s hard on everyone. We are busy organizing our schedules, buying books, and getting back to the swing of things. Cooking tends to be hard during this time and many tend to buy fast food or go to restaurants, and this can add up. I’ve prepared a cheap and easy recipe you can prep and pop in your backpack.
First, open your can of spam. Make sure to not throw the tin away! Slice into about six to eight slices depending on how thick you like them. Make sure to slice it from the top of the can to the bottom, not side to side. Place the pan on the stove and set to medium. Cook slices of spam on both sides until they become slightly brown on each side. Place slices on a paper towel to absorb oils. To make sauce, use the same pan used to cook spam and set to medium-low heat. Add your cup of water, a 1/4 cup of soy sauce, five tbsps of brown sugar, two tsps of rice wine vinegar, a pinch of ginger powder, a pinch of garlic powder and stir. Let the sauce reduce until big bubbles form and the sauce has thickened. Once sauce is thick place the spam slices back in the pan and evenly coat each slice.
Take your plastic wrap and cut six to eight large slices depending how many spam slices were made. Grab your spam tin and place one piece of your plastic wrap in the tin. Grab the day-old rice and fill the tin about 1/4 of the way. Place spam on top then press down firmly. Lift plastic wrap to release the spam musubi and wrap with plastic wrap tightly. Eat and enjoy!

- 1 can of reduced sodium spam
- 1 cup of water
- 1/4 cup of soy sauce
- 5 tbsp of brown sugar
- 2 tsps of rice wine vinegar
- Pinch of ginger powder
- Pinch of garlic powder
- 2 cups of day-old white rice
